Salmon Patties

If there is a day that you want a nutritious meal and cannot get to the store, then salmon patties is the meal for you. This recipe can be made in no time at all. Canned salmon is just as nutritious as fresh salmon at a fraction of the price.

Salmon Patties

This is my favorite salmon patty recipe. You will love how they are so moist. Feel free to freeze them in batches once your family falls in love.

Ingredients

  • 1 egg
  • 2 120 g canned salmon
  • 1/2 cup bread crumbs
  • 1/4 cup plain greek yogurt
  • 1.5 tsp dijon mustard
  • 1 tsp lemon juice
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1-2 tbsp parsley chopped
  • Pepper to taste
  • 1-2 tbsp oil for frying

Instructions

  • Whisk an egg in a medium sized mixing bowl. Add the drained canned salmon to the bowl. Add the bread crumbs, yogurt, mustard, lemon juice, onion powder, garlic powder. With a fork, lightly mix to combine, breaking apart the salmon. Gently stir in the parsley.
  • Scoop the mixture into ½ capfuls and shape into 4 patties. Approx 1-inch thick.
  • In a cast iron or medium sized frying pan, coat with 1 tbsp oil. Brown the patties on each side. And cook approximately 3 minutes per side.
  • Enjoy with yogurt, fresh lemon and/or parsley
