I like to have a lot of variety in my diet and make a veggie meal a few times a week. My go-to was often tofu. I now like to change it up and have added tempeh to my diet. It is a great source of protein, calcium, and iron. Low in carbs and sodium too. To remove the bitterness of tempeh, I recommend boiling it before you cook it. It can then be baked, grilled, stir-fried, and more.
I love it cold too, added to my salads.
