Frittata

 I used to get scared of the word frittata until I learned that it is just a fancy word for fillings that are mixed in with the eggs. Frittatas are an economical way to feed a large family a nutritious and quick meal. We cook our frittata’s in a cast iron as I love that you can bake it quickly in the oven. My kids cook this meal and change the fillings each time.

Frittata

This vegetarian recipe will become a staple in your home. Great for any family meal.
Prep Time 5 minutes
Cook Time 15 minutes

Ingredients

  • 8-10 eggs
  • 1/2 cup milk (or dairy free milk)
  • 1 cup shredded mozzerella
  • 1 tbsp olive oil (or avocado oil)
  • 1 onion or shallot (chopped)
  • 2-3 cloves garlic, minced
  • 1 cup vegetables of your choice, sliced (mushrooms and/or peppers)
  • Salt, fresh ground pepper and red pepper flakes to taste
  • Optional: ¼ cup ricotta cheese, 2 cups of baby spinach or kale

Instructions

  • Preheat the oven to 350-375℃. In a medium bowl, whisk together eggs, milk and mozzarella. Season with salt, pepper and red pepper flakes.
  • In a cast iron or large skillet over medium heat, heat oil. Add onion and garlic, and cook for about 5 minutes, until soft.
  • Add mushrooms and cook until soft. Season with salt, pepper and red pepper flakes.
  • Pour mixture into skillet and even out
  • Bake in the oven until eggs are set, approx.10 minutes.
