My favorite treat to either buy or bake since I was a young girl is rice Krispie squares. As an adult, I have less of a sweet tooth so I now make them without marshmallows, use brown rice instead of the typical white, and I add dark chocolate to satisfy any sweet cravings of mine. Nut butter works well to hold these treats together and provides heart-healthy fats, a high amount of protein, and fibre. If you need to sub nut butter, please try sunflower seed butter or tahini. Makes a great option for school lunches too! I promise you will love this recipe and you will likely be eating out of the pan, like me! They really hit the spot. Enjoy!

Brown Rice Krispie Treats
Who doesn't love rice krispie squares? I promise you will love these krispie rice treats even more. Made with wholesome ingredients for the whole family to enjoy, like brown rice and nut butter. Must try!!!
Servings 9 bars
Ingredients
- 2 1/2 cups brown crispy rice cereal
- 1/4 cup cacoa nibs
- 1/2 cup smooth nut butter
- 1/3 cup maple syrup
- 3 Tbsp's coconut oil (melted)
- Melted dark chocolate, for drizzling (optional)
Instructions
- Line an 8-inch square baking dish with parchment paper.
- In a large bowl, stir together the brown rice cereal and cacao nibs.
- In a small saucepan, combine the nut butter, maple syrup, and coconut oil. Stir constantly over low heat until melted, 1-3 minutes.
- Pour the melted nut butter mixture into the bowl and mix until the cereal is coated.
- Transfer the mixture to the prepared baking dish and press down on it with a spatula to form an even layer.
- Chill the mixture in the fridge until set, about 1 hour. Slice into 9 bars and drizzle some chocolate, if desired.
Notes
Best to leave stored in the refrigerator to maintain freshness.
