My family prefers meatballs made with chicken, so I have been experimenting with new recipes. This recipe is one of our favorites as it is super simple, moist, and provides lean protein and fibre. Made with almond flour to make the recipe gluten free. Almond flour is high in protein, low in carbohydrates, and contains fibre which makes it one of my favorite flours to use.

Italian Chicken Meatballs

Simple gluten-free meatballs for your family to enjoy. Made with only 6 ingredients that are found in most kitchens. Your family is going to love the flavours.

Ingredients

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 egg
  • 1/2 cup almond flour
  • 1 lb lean ground chicken
  • salt to taste
  • your favorite tomato sauce for topping

Instructions

  • Preheat oven to 400°. Line a baking tray with parchment paper.
  • In a large bowl, whisk all ingredients except for chicken until a paste forms.
  • Add your chicken and work mixture into the meat. Form meatballs using 1 tbsp at a time. Can also use a cookie scoop with a release. If the meatballs are sticking when rolling, dip your fingers in water.
  • Bake meatballs for 20-22minutes.
  • Cover with your favorite tomato sauce and enjoy.
