Molten Mug Cake

Ingredients

  • 2 tbsp All purpose flour gluten free flour (same ratio)
  • 2 tbsp unsweetened cacao powder
  • 1/4 tsp baking powder
  • 1/8 tsp sea salt
  • 3 tbsp milk or dairy free milk
  • 2 tbsp unsweetened apple sauce
  • 1 tbsp maple syrup
  • 1 tbsp sunflower seed butter or any nut butter (peanut butter, almond butter)
  • 1 tbsp dark or semi-sweet chocolate chips (for dairy-free, try Enjoy Life chocolate chips) add 1 additional Tbsp for an extra chocolatey mug cake

Optional Toppings: yogurt, fresh fruit, cacao nibs, broken walnut pieces

    Instructions

    • Use cooking spray to spray a microwave-safe 12-oz mug.
    • Add flour, cacao powder, baking powder, and salt into the mug and stir together.
    • Add the milk, apple sauce, maple syrup, and sunflower seed butter. Whisk with a fork until combined. Gently fold in the chocolate chips.
    • Place the mug in the microwave and cook on high for 90 seconds. Check if cooked by inserting a toothpick into the centre of the mug cake. The toothpick should come out with only a few moist pieces. If toothpick looks very wet, add another 10-30 seconds.
    • Let cool for 3 minutes as the cake will be very hot. Add with any additional toppings, if desired, and Enjoy!!!

    Notes

    The exact cook time varies based on the power of the microwave and the mug size and shape. On average the cooking time will be 90 seconds. From there, I would add 10-30 seconds and check again.
