Peanut Butter Energy Bites

No-bake peanut butter energy bites are loaded with protein and healthy fats. Enjoy at breakfast or for a quick snack on the go. Loaded with almonds, dates, and oats. No extra sugars added!!!

I kept this recipe simple, however, you can add your favorite dried fruit or chocolate chips to add sweetness. You could also roll the energy bites in shredded unsweetened coconut or cacao powder. These energy bites go fast in my house so we store them in the fridge. If you live a busy life on the go, you can freeze them and take them from the freezer on your way out the door. They will be thawed for when you need a boost of energy.

Peanut Butter Energy Bites

No-bake peanut butter energy bites are loaded with protein and healthy fats. Enjoy at breakfast or for a quick snack on the go.

Ingredients

  • 2 cup almonds
  • 1 cup dates
  • ½ cup oats (can use gluten free)
  • ½ cup natural peanut butter
  • 2 tsp cinnamon
  • pinch salt
  • ⅓-½ cup water

Instructions

  • Soak the dates in a bowl with hot water for 10 minutes.
  • In a processor or strong blender, mix the almonds and oats. Then add the cinnamon, peanut butter, dates, and ⅓ cup of water. Mix on high until forms a thick paste. If the mixture is too dry and a little more water.
  • Shape the energy bites into approx 1" balls or the size of your choice. Place the balls on a lined cookie tray and place them in the freezer for one hour.
  • Once they have been set you can store them in the fridge or freezer in an air-tight container.
  • Enjoy!!!
