Nut Free Energy Balls

I am a big fan of nutrient-dense quick snacks when you or your kids need a pick me up in the afternoon. What I love about this recipe is that it works amazing for school lunches as they are nut-free. You can even freeze and take one out in the morning. By lunchtime, they will be thawed for your kids. You can substitute the chocolate chips for a dried fruit of your choice. Dried blueberries or cherries would be amazing.

Nut Free Energy Balls

Keep this recipe on hand so you can have a nutritious and delicious option for when you need a re-charge. Nut free approved for School Lunches.

Ingredients

  • 1 cup quick oats
  • 1 cup pumpkin or sunflower seed butter
  • 1/4 cup chia seeds
  • 2 tbsp honey (or stevia, date syrup, maple syrup)
  • 1 tbsp coconut oil (or avocado, hemp seed oil)
  • 1 tsp vanilla extract
  • 2.5 tbsp cacao powder
  • 1/3 cup dark chocolate chips
  • Pink sea salt optional

Instructions

  • Add all the ingredients except the chocolate chips into a food processor and/or blender until well blended.
  • Transfer to bowl, add chocolate chips, and mix well
  • Roll into 1-inch balls and place on parchment paper in a glass container with lid. Chill and Serve!
