Healthy Banana Walnut Muffins

My kids and I are always in need of a pick-me-up snack in the afternoon. These healthy banana walnut muffins are sure to satisfy that hunger. They are incredibly moist, packed with nutrition and amazing flavours. These muffins also work great for a breakfast on the go.

You can easily make these muffins dairy free with the use of almond milk, and nut free if you swap the walnuts for pumpkin seeds.

Healthy Banana Walnut Muffins

These incredible banana walnut muffins are incredibly moist and sweetened with ripe bananas and honey. Comes together in no time at all. Perfect for breakfast on the go or a pick-me-up afternoon snack.
Prep Time 5 minutes
Cook Time 20 minutes
Servings 12 muffins

Ingredients

  • 3 very overripe bananas, mashed
  • cup honey
  • 1 egg
  • ½ tbsp vanilla extract
  • ¼ cup dairy-free milk or milk of your choice
  • cup whole wheat pastry flour or 1 cup all purpose flour and ¾ cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup chopped walnuts to mix in and ¼ cup chopped walnuts for sprinkling on top of muffins.

Instructions

  • Preheat oven to 350°. Line or spray a muffin tin.
  • In a large bowl, mix together mashed bananas, honey, egg, olive oil, and milk until well combined. Add in the flour, baking soda, cinnamon, and salt. Mix well and then gently fold in ½ cup chopped walnuts.
  • Divide batter evenly into muffin tin, sprinkle each muffin with chopped walnuts. Bake for 20 minutes or until a toothpick comes out clean.
