Nut Free Energy Balls
Keep this recipe on hand so you can have a nutritious and delicious option for when you need a re-charge. Nut free approved for School Lunches.
- 1 cup quick oats
- 1 cup pumpkin or sunflower seed butter
- 1/4 cup chia seeds
- 2 tbsp honey (or stevia, date syrup, maple syrup)
- 1 tbsp coconut oil (or avocado, hemp seed oil)
- 1 tsp vanilla extract
- 2.5 tbsp cacao powder
- 1/3 cup dark chocolate chips
- Pink sea salt optional
Add all the ingredients except the chocolate chips into a food processor and/or blender until well blended.
Transfer to bowl, add chocolate chips, and mix well
Roll into 1-inch balls and place on parchment paper in a glass container with lid. Chill and Serve!
