Air-Fryer Coconut Shrimp

Air-Fryer coconut shrimp is going to wow your taste buds. The crispy flavour is pure perfection. Plus you are getting fibre and iron.

Ingredients
  

  • lb large shrimp (shelled, deveined)
  • ½ cup panko breadcrumbs
  • cup unsweetened shredded coconut flakes
  • ¼ tsp salt (or to taste)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ cup all-purpose flour
  • 1 egg
  • ⅓-½ cup light coconut milk (depending on how thin you like the batter)
  • coconut baking spray

Instructions
 

  • In a bowl combine, panko breadcrumbs, unsweetened coconut flakes, salt, paprika, and garlic powder.
  • In a separate bowl, combine flour with egg and coconut milk. Feel free to add more coconut milk, if batter needs to be thinned out.
  • Dip shrimp in the wet bowl, followed by the dry bowl, and place the coated shrimp onto a baking tray lined with parchment paper. Spay the air-fryer basket with coconut spray and preheat your air fryer to 390°.
  • Once preheated, work in batches, allowing the shrimp not to touch one another. Spray the shrimp with coconut oil before cooking. Cook for 8-10 minutes, flipping halfway.
