In a bowl combine, panko breadcrumbs, unsweetened coconut flakes, salt, paprika, and garlic powder.
In a separate bowl, combine flour with egg and coconut milk. Feel free to add more coconut milk, if batter needs to be thinned out.
Dip shrimp in the wet bowl, followed by the dry bowl, and place the coated shrimp onto a baking tray lined with parchment paper. Spay the air-fryer basket with coconut spray and preheat your air fryer to 390°.
Once preheated, work in batches, allowing the shrimp not to touch one another. Spray the shrimp with coconut oil before cooking. Cook for 8-10 minutes, flipping halfway.
