Vegetarian "Meatballs"

These vegetarian meatballs are packed with nutrition. Enjoy as a main course or even an appetizer when entertaining. Serve with your favorite dipping sauce.

Ingredients
  

  • 400 g cauliflower rice
  • cups quinoa
  • 1 cup breadcrumbs
  • 2 eggs
  • 1-2 tsp chili powder. paprika, and cumin
  • 1 tsp salt
  • olive oil to brush over top

Instructions
 

  • Preheat the oven to 400°. Steam the cauliflower rice according to package directions. Cook the quinoa as well.
  • Pulse the cauliflower and the quinoa in a processor until semi-smooth. Transfer mixture to a large mixing bowl and combine with other ingredients. Stir until everything is incorporated. Roll into 1 inch balls.
  • Brush meatballs with olive oil and bake for 20 minutes. Serve with your favorite dipping sauce. Incorporate into salads, bowls, and more. Enjoy!!!
