Frittata
This vegetarian recipe will become a staple in your home. Great for any family meal.

- 8-10 eggs
- 1/2 cup milk (or dairy free milk)
- 1 cup shredded mozzerella
- 1 tbsp olive oil (or avocado oil)
- 1 onion or shallot (chopped)
- 2-3 cloves garlic, minced
- 1 cup vegetables of your choice, sliced (mushrooms and/or peppers)
- Salt, fresh ground pepper and red pepper flakes to taste
- Optional: ¼ cup ricotta cheese, 2 cups of baby spinach or kale
Preheat the oven to 350-375℃. In a medium bowl, whisk together eggs, milk and mozzarella. Season with salt, pepper and red pepper flakes.
In a cast iron or large skillet over medium heat, heat oil. Add onion and garlic, and cook for about 5 minutes, until soft.
Add mushrooms and cook until soft. Season with salt, pepper and red pepper flakes.
Pour mixture into skillet and even out
Bake in the oven until eggs are set, approx.10 minutes.
