Polka Dot Cake

Who doesn't love chocolate? This recipe is super fun and easy to make. The dark chocolate and the cocoa powder will satisfy your sweet tooth, while at the same time not cause you to eat too much at once.

Ingredients
  

  • 2 cups flour 1 cup all- purpose and 1/2 whole wheat also works.
  • 3/4 cup cocoa powder
  • 1 1/2 cups sugar coconut or any sugar of your choice
  • 1 tsp baking soda
  • 2 tsp baking powder
  • pinch salt
  • 1 cup orange juice lemon juice also works
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tsp pure vanilla extract
  • 1 cup boiling water

Topping

  • 1 cup powdered sugar
  • 4 Tbsp cocoa powder
  • 7 tsp water
  • 1 cup mixed white and dark chocolate chips for topping

Instructions
 

  • Preheat oven to 350°. Coat a Bundt pan with non stick cooking spray
  • Either by hand or with an electric hand mixer, combine flour, sugar, cocoa, baking powder, baking soda and salt. Mix until well combined.
  • Add juice, oil, eggs, and vanilla; beat until well blended, about 1 minute. Carefully add boiling water; mix until smooth.
  • Pour batter into prepared pan. Bake for 50 minutes, or unil set.
  • Meanwhile, in a small bowl, combine powdered sugar, cocoa, and water; mix until thick.
  • Cook cake completely. Spread cake with icing; top with white and dark chocolate chips. Enjoy!!!
