4 Ingredient Energy Balls
The perfect snack for on the go. You only need 4 ingredients and 10 minutes of your time to make these healthy, nutritious, and protein-packed energy balls.
- 1/2 cup Medjool dates
- 1 cup rolled oats
- 1/2 cup almond butter can use any nut or seed butter
- 2 tbsp hemp seeds
- unsweetened shredded coconut for topping
- drizzle honey optional
Soak the medjool dates in boiling hot water for 5 minutes. Drain and set aside.
Combine the softened and drained dates, oats, almond butter, and honey; if using, in a food processor. Process until the mixture binds, around 3-5 minutes.
Roll into 16 balls with your hands (use one heaping tablespoon per ball) until smooth
Roll the balls into shredded coconut or other optional toppings (see below).
Keep refrigerated in an airtight container for up to 5 days.
Optional Toppings:
Finely chopped nuts, chia seeds, cacao powder, or drizzle melted dark chocolate.
