Chicken Burgers on Squash "Buns"
These burgers are truly a winner! Packed with amazing flavours like lime, paprika, and cumin. Serve these burgers on butternut squash rounds to make it a low carb meal and Passover approved.

- 1 lb lean ground chicken
- 1/2 red or yellow onion, finely minced
- 1/2 tbsp cumin
- 1 tsp paprika
- 1 clove garlic, minced
- 1 egg
- 3 tbsp almond flour
- 1 lime, juiced
Optional- 1/4 cup cilantro, chopped and 1 jalapeno finely diced
Squash
- 1 butternut squash- peeled and cut into 1/2" thick circles
- 1 tbsp olive oil
Combine all the ingredients for the burgers in a bowl, mix well and form into 5 patties.
Peel the squash and slice into 1/2" thick rounds and brush with olive oil.
Bake the squash at 400° for 30 minutes.
Fry the patties in a cast iron with oil for approx 6 mins per side until the insides are no longer pink.
To serve top a butternut squash circle with lettuce, a chicken burger, guacamole and salsa. Serve warm and Enjoy!
