Veggie Quesadillas

These veggie quesadillas are such a fun, flavourful and nutritious meal for any crowd. Easily customizable with your favorite veggies.

Ingredients
  

  • 8 flour tortillas white o2r whole wheat
  • 2 cups shredded cheddar cheese vegan cheese also works
  • ½ butternut squash, roasted or 1-2 sweet potatoes, roasted
  • 1 pepper, diced any colour
  • 1 cup kale, torn in pieces
  • 1 small yellow onion, diced
  • 1 15oz can Eden, black beans or coooked black beans

For Serving: guacamole, salsa, lime wedges, cilantro

    Instructions
     

    • Assemble tortillas with cheese, squash, beans, pepper, and kale, and onion. Fold each tortilla in half and cook in a hot frying pan, greased with cooking oil. Cook 3 minutes per side.
    • Serve with guacamole, salsa, lime wedges and/or cilantro.
    • Enjoy!!!
