Veggie Quesadillas
These veggie quesadillas are such a fun, flavourful and nutritious meal for any crowd. Easily customizable with your favorite veggies.

- 8 flour tortillas white o2r whole wheat
- 2 cups shredded cheddar cheese vegan cheese also works
- ½ butternut squash, roasted or 1-2 sweet potatoes, roasted
- 1 pepper, diced any colour
- 1 cup kale, torn in pieces
- 1 small yellow onion, diced
- 1 15oz can Eden, black beans or coooked black beans
For Serving: guacamole, salsa, lime wedges, cilantro
Assemble tortillas with cheese, squash, beans, pepper, and kale, and onion. Fold each tortilla in half and cook in a hot frying pan, greased with cooking oil. Cook 3 minutes per side.
Serve with guacamole, salsa, lime wedges and/or cilantro.
