Vegetarian "Meatballs"
These vegetarian meatballs are packed with nutrition. Enjoy as a main course or even an appetizer when entertaining. Serve with your favorite dipping sauce.

- 400 g cauliflower rice
- 1½ cups quinoa
- 1 cup breadcrumbs
- 2 eggs
- 1-2 tsp chili powder. paprika, and cumin
- 1 tsp salt
- olive oil to brush over top
Preheat the oven to 400°. Steam the cauliflower rice according to package directions. Cook the quinoa as well.
Pulse the cauliflower and the quinoa in a processor until semi-smooth. Transfer mixture to a large mixing bowl and combine with other ingredients. Stir until everything is incorporated. Roll into 1 inch balls.
Brush meatballs with olive oil and bake for 20 minutes. Serve with your favorite dipping sauce. Incorporate into salads, bowls, and more. Enjoy!!!
