This recipe makes for a delicious, nutritious, and a one pan meal which is the absolute best. You can buy riced cauliflower fresh or frozen to make the prep even faster. The high protein content will make you feel full for hours.

Shrimp Cauliflower Fried Rice

This is a delicious and nutrient-dense one-pan meal that will be loved in your household.

Ingredients

  • 1 lb fresh or frozen shrimp, peeled
  • 1 small cauliflower, broken into florets (about 3 cups)
  • 2 cloves garlic, minced
  • 2 small zucchini, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 2 tbsp low sodium sauce
  • 1 tsp ginger powder
  • 1 tbsp olive oil
  • Sesame seeds for garnish or fresh parsley, chopped

Instructions

  • Place cauliflower florets in the processor and pulse until a riced size. Other options are to finely chop or buy riced cauliflower.
  • Heat 1Tbsp oil in a wok over medium heat
  • Add in the garlic, shrimp and ginger powder and cook for 2 minutes
  • Next stir fry the zucchini and pepper, followed by the cauliflower and cook for 4 minutes.
  • Add in the soy sauce, and cook for 2-3 minutes. Sauce should be slightly reduced.
  • Remove from heat and sprinkle with sesame seeds or fresh parsley
  • Enjoy!
