Shrimp Cauliflower Fried Rice
This is a delicious and nutrient-dense one-pan meal that will be loved in your household.
1small cauliflower, broken into florets(about 3 cups)
2clovesgarlic, minced
2small zucchini, diced
1red pepper, diced
1yellow pepper, diced
2tbsplow sodium sauce
1tspginger powder
1tbspolive oil
Sesame seeds for garnish or fresh parsley, chopped
Instructions
Place cauliflower florets in the processor and pulse until a riced size. Other options are to finely chop or buy riced cauliflower.
Heat 1Tbsp oil in a wok over medium heat
Add in the garlic, shrimp and ginger powder and cook for 2 minutes
Next stir fry the zucchini and pepper, followed by the cauliflower and cook for 4 minutes.
Add in the soy sauce, and cook for 2-3 minutes. Sauce should be slightly reduced.
Remove from heat and sprinkle with sesame seeds or fresh parsley
