What is Socca? It is made of chickpea flour and is more like a pancake or thick crepes. Gluten free, high fibre and versatile. Tonight, we made socca into pizzas. The possibilities for toppings are endless. Have your topping ready and cooked to add on as soon as the soccas are ready.

Socca Pizzas

Socca pizzas will be your new way to make pizza dough in a flash. Read on to learn more about this nutritional powerhouse.

Ingredients

  • 2.5 cups chickpea flour
  • 2 tbsp olive oil for frying and more as needed
  • Salt to taste
  • Toppings of your choice

Instructions

  • To make the batter, whisk together the chickpea flour, olive oil and 2 cups water and season with a pinch of salt. Add two Tbsp olive oil into an 8-inch nonstick pan over medium-high heat. Pour ΒΌ cup of the batter and cook for 3-5 minutes, until the bottom is crispy, and the top is almost set. Carefully flip the socca and cook for 1 minute more. Transfer to a plate and top with your favorite toppings. Repeat with the remaining batter.
