You may have heard of acai. It is a powerful fruit, often referred to as a superfood. Acai is rich in fibre, has numerous antioxidants, aid in digestion, and may help improve cholesterol levels. I love the taste and the colour is amazing, so you really cannot go wrong with adding acai to your diet. I find it challenging to find it in the frozen section in big-box grocery stores. However, I have recently switched to acai powder which works just as well.

Acai Bowl
Acai will become your new superfood in your diet. So many ways to use and the benefits and taste are amazing.
Ingredients
- 1 tbsp coconut oil
- 2 tbsp unsweetened coconut flakes
- 1 3.5 oz. pack frozen acai berries (or 2 tsp of acai powder)
- 1 banana (fresh or frozen)
- 2 tbsp milk of your choice
- 1 tbsp almond butter
- 1 tbsp chia seeds
- Toppings: goji berries, granola, fresh fruit, coconut flakes, Medjool dates
Instructions
- In a small frying pan, melt the coconut oil over medium-high heat. Add the coconut flakes and toast for 2-3 minutes, and set aside.
- Using a high powered blender, break the acai pack into large pieces.
- Add the banana, almond butter, and milk and process until smooth.
- Pour the mixture into a bowl and garnish with toasted coconut flakes and other toppings of your choice.
- Enjoy!!!
