Cashew Dip

We eat a lot of raw and cooked veggies. We also eat a lot of hummus. This week we changed it up with homemade cashew dip and it was delicious. There are cashew dips in the store, however, they have a lot more sodium and are also pricey.

Below is a simple recipe to make.

Cashew Dip

This recipe will be your new go to dip for all your vegetables. Also delicious on all your grains too.

Ingredients

  • 1 cup raw cashews
  • 1-2 cloves garlic
  • 1 tbsp oil or fresh squeezed lemon
  • Salt to taste

Instructions

  • Soak the cashews in water for 2 hours. Or soak overnight in the refrigerator.
  • Rinse the cashews and add to a blender along with the oil or lemon juice, salt
  • Blend well and add more water (i.e. ½ cup) if you want it thinned out.
  • Refrigerate or Enjoy!
