Polka Dot Cake

This cake is for all you dark chocolate lovers. The polka dot cake will satisfy your sweet tooth while at the same time allowing you to still feel good about eating it. You will also have fun making this simple and quick cake. It looks gorgeous when completed so you will feel proud of yourself. Your kids can even make it themselves. My daughter, Leah is the baker in our home. While I do not promote sweets daily, I am a very practical dietitian and follow the moderation and balanced way of eating. I like to recommend the 80/20 rule which simply means that 80% of the time you are enjoying nutritious foods and the other 20% you are enjoying your favorite sweets.

Polka Dot Cake

Who doesn't love chocolate? This recipe is super fun and easy to make. The dark chocolate and the cocoa powder will satisfy your sweet tooth, while at the same time not cause you to eat too much at once.

Ingredients

  • 2 cups flour 1 cup all- purpose and 1/2 whole wheat also works.
  • 3/4 cup cocoa powder
  • 1 1/2 cups sugar coconut or any sugar of your choice
  • 1 tsp baking soda
  • 2 tsp baking powder
  • pinch salt
  • 1 cup orange juice lemon juice also works
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tsp pure vanilla extract
  • 1 cup boiling water

Topping

  • 1 cup powdered sugar
  • 4 Tbsp cocoa powder
  • 7 tsp water
  • 1 cup mixed white and dark chocolate chips for topping

Instructions

  • Preheat oven to 350°. Coat a Bundt pan with non stick cooking spray
  • Either by hand or with an electric hand mixer, combine flour, sugar, cocoa, baking powder, baking soda and salt. Mix until well combined.
  • Add juice, oil, eggs, and vanilla; beat until well blended, about 1 minute. Carefully add boiling water; mix until smooth.
  • Pour batter into prepared pan. Bake for 50 minutes, or unil set.
  • Meanwhile, in a small bowl, combine powdered sugar, cocoa, and water; mix until thick.
  • Cook cake completely. Spread cake with icing; top with white and dark chocolate chips. Enjoy!!!
