Best Ever Chicken Breasts

When my kids walk in from school they always ask what’s for dinner. If I say chicken, their faces drop with disappointment. However, this creation turned out incredible and we were all magically surprised. The secret to this recipe is broiling. This “best ever chicken” has become a staple in our weeknight dinners, especially when I am exhausted to cook. You can prepare in minutes and have dinner on the table in no time at all. Pairs wonderfully with my Mediterranean Cauliflower Rice recipe.

Best Ever Chicken Breast

This recipe will not disappoint. Easy weeknight meal that is juicy and moist. Seasoned with fresh herbs, and delicious every time.

Ingredients

  • 4 6oz chicken breasts
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • 2 tbsp olive oil
  • freshly chopped parsley for garnish (or dried)

Instructions

  • Preheat oven to 400° and line a baking tray with parchment paper.
  • Combine the paprika, oregano, garlic powder, onion powder, salt and pepper, and olive oil in a large bowl. Place the chicken in the bowl and toss to combine so the chicken is evenly coated with the seasoning.
  • Bake chicken in oven for appox. 18 minutes.
  • Broil on high heat for 3 minutes. Watch carefully to prevent burning the chicken.
  • Garnish chicken with fresh or dried parsley. Optional add on- toasted pine nuts.
