Healthy Banana Split

Is it a snack? breakfast? dessert? The answer is yes to all. I love how fun, easy, and versatile this recipe is. The toppings for this yogurt-based banana split are endless. Today, I made this with my 5-year-old son and we used plain yogurt, fresh berries, cocoa nibs, chocolate chips, and a peanut butter drizzle. Granola, crunchy cereal topping (eg brown rice crisps), and/or chopped walnuts work well too!

Healthy Banana Split

Ingredients

  • 1 banana
  • 1/3 cup plain yogurt
  • 1 tbsp cocoa nibs
  • 2 tbsp any berries for topping
  • 2 tbsp peanut butter drizzle
  • 1 tbsp honey (optional)

Instructions

  • Cut banana in half lengthwise while peel is still on and then remove peel. Place banana on dish.
  • Add yogurt to the middle of the banana slices. Top with berries, cocoa nibs, and honey (if using).
  • Heat peanut butter in the microwave for approx 15 seconds (until a runny consistency). Drizzle over banana with a spoon and enjoy.
