This delicious baked lemon cod is made with 5 simple ingredients and will be on your table in under 15 minutes. It is a simple weeknight dinner that will be loved by all. The use of fresh lemon and parsley make this dish beyond flavourful. The cod also provides an excellent source of lean protein.

Cod is definitely a family friendly fish as it has a slightly sweet flavour. It also contains less mercury than other popular fish which is an added bonus. I am a huge fan of baking fish as it requires less active cooking time, less oil, and does not cause a fishy smell in your home. Are you sold yet?

Baked Lemon Cod

This delicious lemon baked cod only has 5 simple ingredients and can be put on the table to enjoy in 15 minutes.

Prep Time 5 minutes

Ingredients

  • 2 lb cod
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • fresh parsley for garnish

Instructions

  • Pat fish dry and arrange on a lined baking tray or dish.
  • Sprinkle fish with salt and pepper.
  • In a small bowl, mix olive oil, juiced lemon, and minced garlic.
  • Brush marinade on to fish.
  • Sprinkle lemon zest on fish and arrange lemon slices on top of fish.
  • Bake at 425° for 8-10 minutes until fish is opaque and flakes with a fork.
  • Garnish with fresh parsley.
