The one meal for me that is usually the same is breakfast. I like a light, simple and nutritious breakfast. My ability to stand is limited, especially when I wake up, so these cookies can be made in advance and last up to 10 days. I eat them with a bowl of blackberries and a hard-boiled egg. They only need 4 simple ingredients that are sure to be in your kitchen.

Almond Butter & Flaxseed Cookies
This recipe is simple and nutritious and lasts for up to 10 days. It is gluten free, high in fibre, and refined sugar free.
Ingredients
- 1 cup seed or nut butter of your choice (I love cashew and almond butter)
- 1/2 cup coconut sugar
- 1 egg
- 1 cup ground flaxseed
Instructions
- Mix all the ingredients together until well blended.
- Roll into 20 (1-inch) balls. I prefer to use a small ice cream scoop that has a release button.
- Place on an oiled baking sheet. Flatten with the tines of a fork
- Bake at 325℃ for 10 minutes.
