When it comes to desserts for me, I like to make things that are not overly sweet and super simple. Almond flour is used in this recipe and is great for people who are gluten-free. Almond flour is made from ground almonds and can replace wheat flour in almost any recipe. Almond flour is filled with vitamins, like vitamin E and other antioxidants. It also contains prebiotic fiber which promotes a healthier digestive system.

Giant GF Cookie

Delicious, healthy, perfect amount of sweetness, and made in minutes. Win-Win on all levels.

Cook Time 15 minutes
Servings 6

Ingredients

  • cups almond flour
  • ½ cup coconut sugar
  • cup coconut oil (liquid or solid that is melted)
  • cup maple syrup
  • 1 tbsp vanilla extract
  • 1 tsp baking soda
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350°F. Whisk the coconut oil (melted), coconut sugar, maple syrup and vanilla.
  • Combine the almond flour and baking soda. Add it to the wet bowl and mix well.
  • Fold in the chocolate chips, gently.
  • Add mixture to a greased 8 or 9" round baking dish.
  • Bake for 15 minutes, until golden brown.
  • Enjoy!!!
