Grilled Peaches with Fresh Mozzarella
These peaches are naturally caramelized, served with delicious fresh mozzarella and toasty bread.
Servings 6
Ingredients
- 1 baguette
- olive oil for brushing on the bread
- 5 ripe peaches, halved and pitted
- 12 ounces fresh mozzarella or burrata
- fresh basil or mint for garnish
honey and chopped pistachios drizzled on top or on the side
Instructions
- Slice the bread into ¾" slices. Brush oil or butter or both sides of the bread.
- Heat a grill pan or a cast iron to medium-high heat. Cook bread until grill marks form about 2-3 minutes. Flip and grill the other side. Put aside.
- Brush the cut side of the peaches with oil. Add to the grill pan on medium-high heat. Cook for about 4 minutes until the peaches have grill marks. Remove from pan and let cool before assembling platter.
- Place fresh mozzarella scattered on a platter, followed by the peaches and lastly the bread. Garnish with fresh basil. Drizzle with honey and chopped pistachios or place on the side.
