This roasted butternut squash risotto has incredible flavour. It is healthier than most risotto’s as it is made with brown rice and not with heavy cream. I promise you will be satisfied and in love with this risotto dish. The prep time is only 15 minutes and although it takes longer to cook than most of my recipes, the active time is not like typical risotto where you have to stir the entire time. This dish is baked in the oven.
