Quick Chicken Fajitas
One skillet chicken fajitas are a must for your busy weeknight meals. Delicious and will be enjoyed by all.

Cook Time 12 minutes mins
- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 1 tsp salt, divided
- 2 large medium peppers (any colours work)
- 1½ lb boneless, skinless chicken breasts, sliced into ¼" thick strips
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 2 limes, juiced
For serving: tortillas, guacamole, salsa
Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onions and season with ¼ teaspoon of the salt. Cook, tossing often to prevent burning, until they begin to soften, about 3 minutes.
Cook the peppers, and garlic. Season with ¼ teaspoon of the salt. Cook, again tossing often, until starting to brown and the garlic is fragrant, about 3 minutes. Set aside.
Brown the chicken with the spices in the remaining 1 tablespoon of oil and ½ teaspoon of salt. Cook approx 6-8 minutes, until chicken is cooked through. Flipping halfway.
Add the vegetables back, add the lime juice and mix well, cooking for another 1-2 minutes.
Serve the fajitas with tortillas, guacamole, and salsa. Enjoy!!!
