Almond Butter & Flaxseed Cookies

This recipe is simple and nutritious and lasts for up to 10 days. It is gluten free, high in fibre, and refined sugar free.

Cook Time 10 minutes

Ingredients
  

  • 1 cup seed or nut butter of your choice (I love cashew and almond butter)
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 cup ground flaxseed

Instructions
 

  • Mix all the ingredients together until well blended.
  • Roll into 20 (1-inch) balls. I prefer to use a small ice cream scoop that has a release button.
  • Place on an oiled baking sheet. Flatten with the tines of a fork
  • Bake at 325℃ for 10 minutes.
