Almond Butter & Flaxseed Cookies
This recipe is simple and nutritious and lasts for up to 10 days. It is gluten free, high in fibre, and refined sugar free.

- 1 cup seed or nut butter of your choice (I love cashew and almond butter)
- 1/2 cup coconut sugar
- 1 egg
- 1 cup ground flaxseed
Mix all the ingredients together until well blended.
Roll into 20 (1-inch) balls. I prefer to use a small ice cream scoop that has a release button.
Place on an oiled baking sheet. Flatten with the tines of a fork
Bake at 325℃ for 10 minutes.
