Chicken Burgers on Squash "Buns"

These burgers are truly a winner! Packed with amazing flavours like lime, paprika, and cumin. Serve these burgers on butternut squash rounds to make it a low carb meal and Passover approved.

Cook Time 20 minutes

Ingredients
  

  • 1 lb lean ground chicken
  • 1/2 red or yellow onion, finely minced
  • 1/2 tbsp cumin
  • 1 tsp paprika
  • 1 clove garlic, minced
  • 1 egg
  • 3 tbsp almond flour
  • 1 lime, juiced

Optional- 1/4 cup cilantro, chopped and 1 jalapeno finely diced

Squash

  • 1 butternut squash- peeled and cut into 1/2" thick circles
  • 1 tbsp olive oil

Instructions
 

  • Combine all the ingredients for the burgers in a bowl, mix well and form into 5 patties.
  • Peel the squash and slice into 1/2" thick rounds and brush with olive oil.
  • Bake the squash at 400° for 30 minutes.
  • Fry the patties in a cast iron with oil for approx 6 mins per side until the insides are no longer pink.

To serve top a butternut squash circle with lettuce, a chicken burger, guacamole and salsa. Serve warm and Enjoy!
