- 1 cup oat flour
- 1/2 cup plant based milk (oat, almond or soy)
- 3 Tbsp liquid coconut oil or olive oil
- 1 Tbsp maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 cup blueberries (fresh or frozen)
Serve with fresh berries, bananas and/or maple syrup.
Keep leftovers refrigerated for up to 5 days, or frozen for 2 months. Warm in the toaster when ready to eat.
