This is my kid’s new favorite recipe. It has given them confidence and independence to make their own breakfast. They also make it sometimes for a snack as it is that good. I love how you can prepare and cook microwave cheesy eggs all in the same dish, making clean-up a breeze. These eggs will be ready in 2 minutes and will be just as delicious and fluffy as cooking on the stovetop.
Eggs really should be classified as a superfood. They contain almost every nutrient that our body needs. One egg contains 6g of complete protein, with all 9 “essential” amino acids. These amino acids are “essential” as they are the building blocks of protein and therefore our body cannot make on their own.
How do you know when the eggs are cooked?
The eggs should be just barely set once completely cooked. Keep in mind that the eggs will also continue to cook for a few minutes after you remove them from the microwave. You might have to experiment with your cooking time to end up with perfect eggs that are not dry and tough. I promise that it will be worth it.
Feel free to add additional toppings when complete. Would be delicious with sliced avocado and tomato.
